Paco with Coconut Milk


Ingredients

Olive Oil
Garlic
Onions
Ginger
Red or Green Bell Pepper
Spring Onions
Tanlad (Lemongrass) 
Tomatoes
Paco
Sili
Coconut Milk (I used Coco Mama)
A little water 
Salt
Pepper

In a pan, heat olive oil. Sauté garlic, onions, ginger, lemongrass, red and green bell pepper and tomatoes for about 3-4 minutes. Add Paco. Mix well and season with salt and pepper. Add just a little water and let it boil for a few minutes. Add sili and spring onions. Mix well. When Paco is already cooked, add coconut milk then turn off heat. 

Do a taste test to know if you still need to add more salt and pepper.

Serve hot with white rice.
