Vegan Chocolate Chip Cookies


3 cups all purpose flour
1 and 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup olive oil with 7 Tbsp water
1/3 cup Lily's Peanut Butter
2 tsp vanilla
1 1/4 cup brown sugar
Guittard semisweet chocolate baking chips (estimate)


In a bowl, sift all purpose flour, baking powder, baking soda and salt. Set aside. In a bowl, whisk olive oil, water, peanut butter, vanilla and brown sugar. Add dry ingredients. Mix well. Add chocolate baking chips. Form into balls on baking tray. Bake in 350 degrees F for 10-12 minutes.
