Vegan Ginataang Ampalaya
Days ago, I ordered Coco Mama online. They arrived today so I decided to try to cook it with my ampalaya. It's my first time to try cooking ampalaya with coconut milk and I think it's also my first time to use coconut milk from a pack. I always use freshly squeezed coconut milk. I must say, the packed Coco Mama tastes good as well if you don't have time to buy fresh coconut from the market.
Sharing with you this simple recipe...
Ingredients
Olive Oil
Garlic
Onions
Ginger
Red Bell Pepper
Spring Onions
Tanlad (Lemongrass)
Tomatoes
Ampalaya
Coconut Milk
Salt
Pepper
Vegetable dumplings
Instructions
In a pot, heat olive oil. Sauté garlic, onions, ginger, lemongrass and red bell pepper for about 2-3 minutes. Add ampalaya and tomatoes. Mix well for about a minute then add your vegetable dumplings. Mix well for about 3 to 4 minutes. Season with salt. Add spring onions. Mix well again for a few minutes until the ampalaya is cooked. Add coconut milk. Season with pepper.
Do a taste test to know if you still need to add more salt.
Serve hot with white rice.
