1 big Garlic (minced)
1 big Red Onion (minced)
2 big Tomatoes (remove the seeds / minced)
10 pieces Eggplant (sliced)
3 stalks Spring onions (finely chopped)
All Purpose Flour (binder so just estimate)
Vegetable Oil for frying
Slice eggplant diagonally (matchbox size) just to see if there are no worms inside. In a pot, boil water. When already boiling, add eggplant. When eggplant is cooked, remove the eggplant and drain the water. Chop eggplant (diced).
In a mixing bowl, add eggplant, garlic, onions, tomatoes, spring onions, all purpose flour, black pepper and salt. Mix well. Form into round patties.
In a non stick pan, heat vegetable oil. Fry the eggplant patties.
