Vegan Adobong Tofu
This is sooo good! I love adobo with white rice! I love Filipino dishes so I made my own version of everyone's favorite in the Philippines, the famous adobo but vegan of course.
Fry the Tofu in vegetable oil. I used Firm Tofu.
In a bowl, mix soy sauce, vinegar, calamansi (remove the seeds), garlic, onions, bay leaf and black pepper.
Marinate the fried tofu for 10 minutes.
In a pan, heat olive oil, sauté garlic and onions. Add marinated tofu without the sauce but do not throw the sauce. Stir fry for a few minutes. After 3 minutes, add the remaining marinade (except the calamansi). You can add more soy sauce and vinegar if you want. Let it boil for just a few minutes. Serve hot with white rice.
